You can’t go wrong with this banana bread bundt cake.  You will be proud to show off this moist, tasty version of banana bread.  The ingredients are always at hand.  This is one of my husband’s favorites.

Materials

  • 226 Grams Butter (Room Temperature) 2 Sticks
  • 322 grams Sugar 1.5 Cups + 2 Tbsp.
  • 3 whole Eggs Extra Large or Large
  • 1.5 cup Mashed Ripe Bananas The riper the better!
  • 495.6 grams All Purpose Flour 4 Cups + 2 Tbsp.
  • 6 grams Baking Soda 1 Tsp.
  • 6 grams Baking Powder 1.5 Tsp.
  • 170 grams Sour Cream 3/4 Cup
  • 170 grams Greek Yogurt (or Plain) 3/4 Cup
  • 1/4 tsp Ground Nutmeg Fresh if you have it!
  • 1/2 tsp Cinnamon
  • 1 Tsp Salt
  • 1 tsp Vanilla
  • 1 tsp Spiced Rum (Optional)

Rum Glaze

  • 5 Cups Powdered Sugar
  • 3 tbsp Milk
  • 1 tbsp Spiced Rum

Instructions

  • Preheat oven to 350 degrees
  • Grease and lightly flour bundt pan using butter.
  • Cream butter and sugar in a mixer using the paddle attachment or in a large bowl until smooth.
  • Add eggs one at a time beating about a minute each until well combined.
  • Add the mashed bananas, vanilla, and rum (If using).
  • Combine dry ingredients in a separate bowl and mix well.
  • Add the yogurt, sour cream, and dry ingredients into the sugar/butter mix in alternating each ingredient a little at a time into the mixture. Beat until well combined.
  • Pour into the well greased and lightly floured bundt pan.
  • Bake on the middle rack for 70 minutes or until a toothpick inserted in the middle comes out clean.
  • Let the cake rest for 10 minutes before turning out onto a cooling rack.

Chef’s Corner:

Measure your flour if you have a scale.   I can’t say this enough.  I’ve ruined recipes using too much flour.  If you can’t measure it, it’s okay, just make sure you don’t pack it in the measuring cup.   

Don’t wait until the last minute to grease your Bundt pan.  I find leaving the grease in the pan longer the better as it allows it to seep into the nooks and crannies of the pan.  These Bundt pans can get complicated.  Butter is my favorite greasing option because of its flavor.  You can’t go wrong, I mean who doesn’t love butter it’s a natural whole food. 

Storing and Freezing – Store the cake on the counter covered for up to three days.  I freeze a lot after it’s cooled down.  Cut it Into individual pieces, wrap it with plastic wrap, and freeze it in a freezer-proof bag.    

When you want a piece (or more,) just pull them out the night before (or a few hours really) and you’re good to go with your morning coffee.   

Bananas – The riper they are the sweeter and best for baking.  Waiting until they are the absolute ripest will result in a sweeter cake.  I’ve purĂ©ed my banana and left it a bit chunky, I like my cake more on the chunky side.  Adjust to your preference.  

You can use frozen bananas for this recipe.  Freezing your bananas when ripe is a perfect way to always have them on hand for smoothies, banana bread, and your other favorites. 

If you use frozen bananas, chose one of the following methods to defrost them: sit at room temperature for two hours, defrost them in the microwave using 50 percent power, or leave them in the refrigerator overnight (or until thawed). 

Flavor Options – I like to add a teaspoon of spiced rum to the batter (with the vanilla) and use a spiced rum glaze.  Pick your own favorite flavors and make them your own.  

Nuts – Everyone loves nuts, except my husband in bread and cakes.  You can add nuts if you’d like, I would.  Add 3/4 cup chopped nuts of your choice, toasted of coarse, after you’ve combined the dry and moist ingredients before you put them into the pan to bake. 

Decorating – There is no wrong way.  Try different flavors or options.  Sprinkle with powdered sugar, drizzle or pour with a glaze, and top with chopped nuts.  Do you!   

Timing is everything.  Makes sure you read your recipes in advance in case you need to prep your ingredients.  This one calls for butter and eggs at room temperature.  If you don’t have time to wait, you can soften your butter in the microwave.  To bring your eggs to room temperature rest them in a bowl of lukewarm water for about ten minutes or until ready.
