  • 3 cups all purpose flour 360 grams
  • 1 cup rye flour, white 106 grams
  • 3/4 Cup pumpernickel flour 78 grams
  • 1/4 Cup potato flour 46 grams
  • 1/4 Cup Bakers Dry Milk or nonfat dry milk 28 grams
  • 2 1/4 tsp instant yeast
  • 2 1/4 tsp salt 14 grams
  • 2 tbsp sugar 25 grams
  • 1 tbsp caraway seeds
  • 1 Tsp onion powder
  • 3 tbsp vegetable oil 37 grams
  • 1 3/4 cups lukewarm water 397 grams

Marble Effect

  • 2 tbsp cocoa powder
  • 1 Tsp espresso powder
  • 1 Tbsp pickle juice

For the topping

  • 1 Medium egg
  • 1 Tbsp water

Instructions
 

  • Prepare your ingredients. Measure the flour carefully use a scale if available to ensure you do not over flour the dough.
  • In a large bowl, mix together the all the bread ingredients except the topping (cocoa, pickle juice, and espresso powder) and knead until smooth.
    If using a bread machine, put all ingredients in the bread machine (as directed by the machine maker (typically liquids first followed by dry ingredients).
  • If kneading by hand, knead until the dough is smooth but sticky. Put the dough in a greased bowl and cover with a damp towel or greased plastic wrap for 1 hour to 1.5 hours or until doubled
    If using a bread machine let the dough mix on the dough cycle for 15 minutes and then turn off the machine and let the bread rise in the bread basket for 1 1/2 hours or until it doubles.
  • While the dough is rising grease well a 2 lb loaf pan with butter.
  • In a small bowl, mix together the cocoa powder, pickle juice, and espresso powder to make a paste.
  • Once the dough has doubled, divide the dough in half. Using your hand, push out one half into a 11” x 8” rectangle.
  • Take the other half of the dough and add in the cocoa, pickle juice, and espresso and knead into he dough until well mixed and the dough has a consistent color due to the new ingredients.
  • Pat this half of dough out into another 11” x 8” rectangle and put this on top of the first dough rectangle.
  • Roll the dough starting with the long edge into a loaf and place in the loaf pan. Pinch the ends to seal the loaf to fit the pan. Let the dough rise for about 1 1/2 hours or until the dough has doubled.
  • Preheat your oven to 400 Degrees F
  • Prepare the topping – beat the egg with 1 tbsp of water and brush on the top of the bread. Put 3 to 4 deep slices across the top of the bread using a sharp knife
  • Tent the loaf with tin foil and put in the oven at 400 degrees F for 10 minutes. Reduce the temperature to 350 and continue to cook for 20 to 25 minutes or until the bread has reached a temperature of 200 degrees F. The loaf should be golden brown and sound hollow when tapped.
  • Allow the bread to cool for a few minutes before removing from the pans and transferring to a wire rack to cool completely.
  • Slice the bread thinly and use for delicious sandwiches!
